Manager's special or hidden treasure?
While browsing through my local grocery store this afternoon waiting for my daughter's perscription to be filled, I noticed a "manager's special." It was stuffed pasta that only takes 3 minutes to cook!! It was more than half off and I can freeze it for later! Every store has a clearance or manager's special section. Check it out!! You can still use your coupons on these items! Little hidden treasures at every store!!

Easy Pasta night.
Tonight I made pasta for dinner for my family. I chopped some onion and 2 red peppers and sauteed it with 1 container of sliced baby portabello mushrooms. Then I added chopped, already prepared rotisserie chicken , 1 container of Philadelphia Cooking Creme (Italian Herb), and 2 cups calcium enriched pasta. I also took one small can of Pillsbury Crescent rolls and pressed it together to get rid of the seams to create one big piece and then took mini cookie cutters and cut stars, hearts, and suns out of it and baked them. They were perfect size for my one year old to hold. She loved the pasta too!!! It was a healthy and hearty meal for us all. Very cheap to make too (especially with your coupons!!!)

Coupon Crazy
I went to my favorite Kroger store in Perrysburg this afternoon and did some of my grocery shopping for the week. I have a store about 15 min from me in Oregon but I prefer to drive the half hour to Perrysburg because the store is cleaner and they double coupons up to a dollar! I spent 26.74 and saved 16.04 with my coupons!! Highly suggest investing in a binder for your coupons to keep them organized. SO MUCH EASIER!!! I have to go to Walmart tomorrow to finish but I can easily do it on my lunch so that it doesn't take away from my family time tomorrow night.

Easy Chocolate Cupcakes
- YIELD: 30 cupcakes
- COST PER SERVING:$.19
- COURSE: Desserts, Cakes/Frostings
Ingredients
- 6 ounces unsweetened chocolate, chopped
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 8 tablespoons (1 stick) unsalted butter, softened
- 2 cups sugar
- 1 teaspoon vanilla extract
- 4 large eggs
- 1 cup milk
Preparation
Melt chocolate in top of double boiler set over simmering water. Stir until smooth, remove from heat and cool until lukewarm. Preheat oven to 350°F. Place cupcake liners in two 12-cup muffin tins and one 6-cup muffin tin.
Stir flour, baking powder and salt in a large bowl until well mixed. Using an electric mixer, beat butter, sugar and vanilla until creamy and smooth. Add eggs one at a time, beating well after each. Stir in chocolate. On low speed, beat in 1/3 of dry ingredients, then half of milk. Repeat, ending with last third of dry ingredients. Do not overmix.
Fill each muffin cup about 2/3 full and bake until a toothpick inserted in center of a cupcake comes out clean, 15 to 20 minutes. Cool in pan on wire racks for 5 minutes, then remove and cool completely on racks.
